
Yvorne AOC ‘À la George’ is a 100% Chasselas from a 2-hectare terraced vineyard, most of which is planted in the traditional Yvorne three-horned goblet system. Situated 2 km downstream from the village, the ‘À la George’ vineyard covers 15 hectares, representing around 10% of the appellation.
The vineyard is run according to the principles of integrated production. Traditional vinification includes settling by flotation, temperature-controlled fermentation, ageing on fine lees and malolactic fermentation.
The estate is family-run, with 4 annual employees, 2 apprentices and seasonal staff (8 for leaf removal, 20 for harvesting).
The entire production is vinified in the Versvey and Villeneuve cellars, which are equipped with a 150,000-litre stainless steel vathouse, allowing for a wide range of vinification volumes (from 300 to 7,000 litres). As well as the different Chasselas varieties from Yvorne, Aigle, Villeneuve and Bex, specialities such as Chardonnay, Œil-de-Perdrix, Pinot Noir, Gamaret and Mondeuse are also vinified here. A cellar has been dedicated to barrel ageing since 1996.
On tasting, Yvorne À la George has a bouquet with floral (lime blossom), fruity (peach, apricot) and slightly mineral notes. On the palate, it is delicious and supple, with a clean, fresh finish. As it matures, the character of the terroir becomes more apparent.
