The new edition of the Gault & Millau Switzerland 2027 has just been released, confirming the vibrant gastronomic scene of the Alpes Vaudoises. In Villars and Ollon, four restaurants are among this year’s distinguished establishments, showcasing exceptional culinary expertise and a deep appreciation for local produce.
Das Villars Palace zeichnet sich durch das Talent von Küchenchef Christian Bertogna aus, dessen Maison 1913 in diesem Jahr mit 13/20 Punkten ausgezeichnet wird. Eine wohlverdiente Anerkennung für eine präzise Küche, die Tradition und Kreativität verbindet und in einem geschichtsträchtigen und prestigereichen Ambiente serviert wird.
In den Mazots du Clos setzt das Duo Marco Cardoso und Alan Bourreau diese Erfolgsgeschichte mit Le Saskia’s fort, das auch in diesem Jahr mit 13/20 Punkten ausgezeichnet wird. Hier wird Gastronomie in einer herzlichen und geselligen Atmosphäre zelebriert, in der jedes Gericht seine eigene Geschichte erzählt.
In Ollon erhält das Restaurant de l’Hôtel de Ville unter der Leitung von Küchenchef Grégory Halgand erneut 15/20 Punkte. Sein authentischer und sorgfältiger gastronomischer Ansatz überzeugt durch Präzision, meisterhafte Zubereitung und die Verbundenheit mit regionalen Produkten.
Gourmets will also enjoy a stop in Gryon, where L’Ancolie, led by William Bouton and Lucille Rougeron, achieves an excellent 14/20. In a gentle and authentic atmosphere, the duo presents cuisine that is both sincere and bold, with subtlety and respect for the ingredients.
Further up, at the foot of the majestic Miroir d’Argentine, the eponymous restaurant led by chef Simon Bely impresses the guide with 14/20. An iconic address where nature and gastronomy meet in an unforgettable experience against one of the most stunning panoramas of the Alpes Vaudoises.
In Bex, Le St Christophe (Mickaël Leloup, 13/20), and the Café Suisse by Marie Robert, crowned with a magnificent 16/20.
